I think almost everyone knows about those little powdered sugar cake donuts that come in a white bag from the grocery store...Those small round cake donuts that are a crumbly cake covered with tons of powdered sugar are a childhood classic and favorite. My kids ask for them when they go shopping with me and see them but I hardly ever buy them because I can make my own in 1/2 an hour and my version is baked, the donuts are bigger and in my opinion homemade is usually better in taste and health wise too! I make mine with a side of raspberry jam dipping sauce... the combo of sweet donut and tart sauce can’t be beat! Recipes below!
Preheat oven to 400 degrees and grease two 6 cavity donut pans for medium size donuts and set aside as you make the batter
Ingredients:
2 cups AP flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/8 teaspoon or a pinch of freshly grated nutmeg
1 teaspoon salt
3/4 cup buttermilk
2 large eggs
2 1/2 tablespoons neutral oil (vegetable, canola etc)
1 teaspoon vanilla extract
1 cup powdered sugar for dipping baked donuts
For raspberry dipping sauce:
1/2 cup raspberry jam
1-2 tablespoons sugar (depends how tart you jam is)
1-2 tablespoons of water to thin out the sauce to your liking.
Instructions:
1. Preheat oven and grease donut pans
2. In a large bowl mix together flour, sugar, baking powder, spices and salt
3. In a large measuring cup or medium bowl mix together the buttermilk, eggs, oil and vanilla.
4. Mix the wet ingredients into the dry until just combined. Don’t over mix!
5. Fill piping bag or large zip lock with corner cut off after filling and fill donut pan 2/3 full. 6. Bake 15-20 minutes for 12 donuts, less if smaller donuts and more for bigger. They won‘t brown a lot so keep an eye on them. Over baking makes them more dry. You want crumbly and cakey but not dry. 7. Cool and unmold and when cool enough to handle dip into the powdered sugar. You may have to double dip and press on the powdered sugar or spritz the donuts with cooking spray to help sugar adhere.
8. To make dipping sauce mix the jam and sugar together and add water to thin it out to your liking. Enjoy!
